The big maple out front was a glorious warm yellow this fall~such a thing of beauty to behold! By Thanksgiving it was bare. We need to rake again, but there will be no jumping, as cats have decided our little front garden is the perfect bank in which to leave deposits. We used to have lots and lots and lots of strays around, so it’s nice to see cats with collars now.Our Thanksgiving was non-traditional. My darling was sick and scheduled to work twelve hour days the entire rest of the weekend. Not being prepared for a feast, I made my version of crisp meat burritos. We used to make them at Taco Time~the job that has always given me the fondest of memories. OH did we have FUN there!
Crisp Meat BurritosFlour tortillas
Ground turkey
Taco seasoning
Cheese
Brown the turkey~I always add a little Lea & Perrins and garlic. Add the taco seasoning and cook as directed, then add shredded cheese~enough that it will be sticky. Turn off the pan.
Cut your flour tortillas so that they have straight, vertical sides for easier rolling. (Don’t forget to save the cuttings to fry and toss with cinnamon and sugar!) Put a small amount of meat on the top tortilla. Fold the tortilla over and then kinda pull it back while pressing down, making a log shape. Roll and hold together with a toothpick. Do this will all of your tortillas.
Put some oil in your pan, fry yer cuttings now and place them to the side to cool. Fry the crisp meats until nicely browned, turning often. Drain. Serve plain or with extra toppings~guacamole, sour cream, salsa, a bed of lettuce lightly sprinkled with salt and lime~be creative!
The children have all taken turns battling sickness since Thanksgiving, and OH their coughing is just terrible! I know they are getting better though. Preston complained of his ear hurting at one point, so I used my usual garlic/mullein oil. By nightfall he was still uncomfortable. That’s when I decided to use Jethro Kloss’s (Back to Eden) suggestion to bake an onion. I sprayed a pan with a little nonstick spray, laid a slice of onion (solid circle) on it, and baked on 350 until the juices began to run. As it cooled to a tolerable temperature I cut the bottom off of one of my darling’s old T-shirts. I tied this strip around Preston’s head to hold the onion over his ear. He went very peacefully to sleep pretty quickly after that and hasn’t complained about it again since. This had to be repeated for little miss Hazel today. She too had been tugging on her ears, and the poor dear hasn’t been able to breathe through her nose even to nurse. I’m used to the garlic oil working, but I pulled out my Dr. Mom otoscope when it didn’t seem it was getting better. She was very, very white inside, so I knew she definitely had an infection. I turned on the oven, got out my pan and sprayed it, got out my onion… I tied a solid circle to each one of her ears, and do you know what? She laid down, nursed right to sleep~even breathing easily through her nose, and has been a different girl ever since! WOW! I took a look with my otoscope, and ears looked healthy~no white to be seen!
*THANK YOU!* APMFormulators for such a wonderful contest prize!!!!! It is such a help, and my poor, poor friends. I used to try to serenade them on my dulcimer, but I think I might take to pullin’ out my otoscope and practicin’ ear check-ups on ‘em for awhile! LOL! I’ve also realized during this past bout of yuckies how much my children are growing up, and how much they know about treating illness. I think it might be time to start adding healthcare to our homeschool schedule….

ETA an update: Repeated the onion on one of Hazel’s ears today. She is peacefully sleeping with a vaporizer~I always add tea tree and vegetable oil to the little cup, but I just learned about adding apple cider vinegar to the water. I could feel it working on myself! LOL! I am also taking oil of oregano myself to help with my mastitis, which is better thanks to my LANAcare nursing pads. The threat of thrush scared me into it…..

Thanks for sharing the onion remedy. I knew about garlic oil, but had never heard of baking an onion. So glad the kiddos are feeling better!
I’ve always wondered about Back to Eden. Do you recommend it?
It always amazes me how little our society knows about natural remedies. We spend $$$ on medication when an onion will do the trick. God always provides for us the nutrition and remedies in nature. I just wish I knew what they all were!!
Your crispy burritos sound delicious! A fine Thanksgiving feast.

Well I’ll have to try that onion thing. Truly amazing.
